Dinner Party

As the nights are getting colder the thought of the BBQ is no longer appealing. Why not invite some friends around for a fuss free dinner party. With the menu below your friends will be impressed without you spending hours in the kitchen.

Nibbles

Chilli Dip

1 cup pumpkin seeds - toasted in oven for 15 mins
1-2 tsp chilli paste or 1 Tbsp sweet chilli sauce
2 cloves garlic
2 Tbsp fresh parsley or coriander
1/2 tsp ground cumin
Juice of 1 lemon
2 Tbsp tomato paste
1/4 cup tomato puree
1/4 cup Garlic or Chilli Infused Olive Oil
Salt and pepper

Place all ingredients into a food processor and process until well combined. Taste and season if necessary. Serve with crackers or some crusty bread.

Starter

Carrot and Cumin Soup

2 Tbsp Garlic Infused Rice Bran Oil
2 tsp cumin seeds
2 medium onions, diced
1 clove garlic
½ red chilli, sliced
1 tsp Manuka Smoked Sea Salt
5 carrots, peeled and chopped
3 cups chicken or vegetable stock

Heat oil in a saucepan and add cumin seeds, cook until fragrant. Add onion, garlic, chilli and salt and sauté for 2 minutes, then add carrot. Stir and cover and leave to cook over a low heat for 10 minutes until the vegetables have softened but not browned. Add stock and bring to the boil. Cover and simmer for 20 minutes or until the carrots are tender. Blend to a puree and serve.

Main

Panfried Fish on Vegetable Fritters with Beetroot Relish

Fritters
1 potato, peeled and grated
1 zucchini, grated
1/2 carrot, peeled and grated
1/3 onion finely diced
1 egg
1/3 cup flour
1 Tbsp chopped fresh herbs
Butter Flavour Infused Rice Bran Oil
Manuka Smoked Sea Salt

Comine ingredients in a mixing bowl then shallow fry in the oil of your choice until crisp and golden then sprinkle with manuka salt.

Fish
4 gurnard fillets
Flour seasoned with Lemon Infused Flaky Salt and cracked black pepper
Lemon Infused Rice Bran Oil

Lightly coat the fish in seasoned flour, shake off any excess and pan fry in a little of the lemon oil until cooked.

Beetroot Relish
1 onion
3 Tbsp Butter Flavour Infused Rice Bran Oil
1 1/2 Tbsp fennel seeds
1 large beetroot, cut into thin strips
1/2 cup water
1 tsp salt
2 Tbsp Cabernet Sauvignon Vinegar

Finely slice the onion and sautè without browning in the butter oil and fennel seeds in a heavy bottomed pan. Add the beetroot, water, salt, freshly ground black pepper and the vinegar and cook over a low heat until the beetroot has softened and almost all the liquid has evaporated (it will take about half an hour). Cool.

To serve, place two vegetable fritters on a warmed plate and top with fish fillets and the beetroot relish, lemon wedges and a rocket salad.

Dessert

Apple Tarts

1 ½ sheets ready prepared puff pastry
2 Tbsp Butter Flavour Infused Rice Bran Oil
1 Tbsp sugar
3 apples, cored and thinly sliced
½ tsp cinnamon
2 Tbsp brown sugar
1 Tbsp Sour Apple Schnapps

Preheat the oven to 180ºC. Brush the pastry sheets with the butter oil and cut into 6 pieces. Press into 6 x 1 cup greased muffin tins, discarding extra pastry. Sprinkle with the sugar. Combine the apples, cinnamon, brown sugar and schnapps and divide between the pastry cases. Bake for 20 minutes or until the apples are soft and the pastry is golden and crisp.
