Prenzel Cooking Flavours

Many fruit distilleries in Europe make flavours for culinary purposes to complement their distilled beverages. These flavours are extensively used by bakers, chocolatiers, paté and ice cream makers, and anyone else who uses alcohol in their cooking. As alcohol evaporates quickly when heated, and with it some flavour, Prenzel Essential flavours (or Concentrates, as they are sometimes known) are traditionally high in alcohol, and have a higher flavour profile. This means that although some alcohol does evaporate, much of the flavour remains. Prenzel Essential Flavours are mostly 60% alc. vol., and have 4 – 6 times the ‘standard' spirit flavour. This means that, for example, 1 litre of Prenzel Cooking Flavour Rum is equivalent to 4 litres of ‘standard' rum.

Prenzel Cooking Flavours are very easy to use - One Litre of Prenzel Cooking Flavour can either: be diluted with 3 parts water, sugar syrup or stock, or just use one quarter of the ‘standard spirit’ specified in the recipe.
